Add some flavor with cilantro and bulk it up with barley!
1 14 oz can cannelini beans
8 oz portobello mushrooms, sliced
2 tbsp sliced jalapenos
4 cloves garlic
1/2 tsp chili powder
1/4 cup cilantro leaves (If you don't like cilantro, leave this out)
1 tbsp olive oil
3 cups low sodium chicken broth
12 oz boneless skinless chicken breast
1/4 cup dried barley, rinsed.
Spray crock pot with non stick spray and add chicken breast, mushrooms and beans
In a food processor or blender, puree the jalapeno, garlic, chili powder, cilantro, olive oil and chicken broth. Pour over the chicken in the crock pot.
Cook on low for 6 hours or high for 4 hours. *In the last 30 minutes of cooking, shred the chicken and add add barley.
Turn off the heat, stir and serve!
