Prosciutto and Broccoli Orzo Bowl

Did you know the chickpea pasta brand Banza recently launched chickpea rice!!??

I tried it for the first time when I gave this recipe a run through and I couldn’t have been any happier with how it turned out. The chickpea rice is almost identical to orzo. Grab a bag at Whole Foods or online and give it a try, you won’t be disappointed!!


1 package Banza brand chickpea rice (or your favorite rice or Orzo)

1 4 oz package of diced prosciutto

1 tbsp olive oil

3 garlic cloves, minced

1 crown of broccoli, chopped into small florets

1/2 cup chicken or vegetable stock

2/3 cup frozen peas

1 oz grated Parmesan cheese

Salt, pepper and red pepper flakes to taste


1. Cook Banza chickpea rice per instructions in a medium saucepan.

2. In a nonstick pan, add olive oil and prosciutto. Cook for 2-3 minutes, until prosciutto is crispy. Remove from pan and set aside.

3. Add broccoli to pan and add about 1-2 tbsp of water. Cover with a lid for 2-3 minutes to allow to cook through. Remove lid, add garlic, cooked chickpea rice, peas and half of the chicken stock. Stir to combine, add remaining liquid if needed.

4. Remove pan from heat, stir in parm cheese and top with crispy prosciutto. Season as needed with salt, pepper and red pepper flakes.
