Instant Pot Chipotle Garlic Pork Carnitas

Traditional Carnitas usually have a marinade that includes orange juice, but... I didn't have any in the house, so I sort of made this up along the way.

My friend Mary Ellen asked me this morning if I liked my Instant Pot... I scratched my head and thought? I've had the thing for over 6 months and I've used it twice. What the hell? Challenge accepted, I give you Carnitas!

Carnitas Ingredients

2 lbs Boneless County Style Pork Ribs (these are cut thicker and are fairly lean)

1/2 tbsp olive oil or olive oil spray instead

3/4 cup low sodium chicken stock/broth

2 cloves garlic, minced

2 chipotle in adobo sauce, chopped finely

1 tbsp adobo sauce

2 limes- juice both and zest 1

1 tsp cumin

3/4 tsp oregano

Lime Sauce Ingredients

1/3 cup plain Greek yogurt (I used Fage 2%)

1/2 lime, juiced and zested (save the other half for the end)

1 tsp olive oil

1 tsp water

dash of salt and cumin


  1. Combine chicken stock, garlic, chipotle, adobo sauce, lime juice, lime zest, cumin and oregano in a small bowl or 2 cup measuring cup.

  2. Set the Instant Pot to saute, on high and add olive oil and pork, searing/browning on both sides (about 2-3 minutes each side)

  3. Change the Instant Pot to pressure cook, on high and pour liquid mixture over the pork. Secure the lid and set the timer for 15 minutes.

  4. Make the Lime Sauce and set aside in fridge

  5. When the pork has pressure cooked for 15 minutes, turn off and let it naturally release for 10 minutes.

  6. Line baking sheet with parchment paper and turn the oven on broil

  7. Force the remaining pressure out of the Instant Pot and remove pork, setting on the baking sheet. Shred into large chunks and squeeze the remaining 1/2 of lime juice all over and lightly sprinkle with a dash a kosher salt.

  8. Broil for 5-7 minutes, until edges of pork are crispy.

***NOTE: If you do not have an Instant Pot, you can put all Carnitas ingredients in a slow cooker on low for 4 hours and pick up step 6!

Assemble tacos! I used yellow corn tortillas with the pork, lime sauce sliced avocado and sprinkled with queso fresco. I served the tacos with a side of black beans and rice.
