Grilled Cheese, Please!

When the season turns to Fall, I want apples... all the time! What better way to introduce an apple into a meal, but into a savory, slightly spicy, grilled cheese sandwich!

The best thing about grilled cheese, is you really only need a few minutes and a few ingredients. Take it to the next level by switching up classic cheeses, using seasonal ingredients and finishing it off with sea salt and honey.

The sandwich.


2 slices of grainy bread of choice. I used Whole Foods 12 Grain Bread from their bakery.

1 tbsp softened butter. I used Kerrygold spreadable grassfed butter

.75 oz shredded sharp cheddar. I used Aldi grassfed cheddar

.5 oz shredded jalepeno havarti. I used Aldi jalepeno havarti

1 small granny smith apple, sliced very thin

kosher salt

Honey for drizzling. I used Wedderspoon manuka 16 factor honey


  1. Heat a cast iron or non stick pan to medium heat

  2. Spread the butter evenly on one side of each slice of bread

  3. Lay one slice of bread in the hot pan, butter side down.

  4. Pile half of the cheese evenly on the bread

  5. Layer the apple slices on top of the cheese

  6. Add the rest of the cheese on top of the apples

  7. Add the next piece of bread on top (butter side facing up) and cover the sandwich with a lid to let the cheeses melt.

  8. After 1-2 minutes, remove the cover, flip the sandwich with a spatula and cover again for another 1-2 minute.

  9. When the sandwich is toasted on each side to your liking, remove from pan, sprinkle with kosher salt and drizzle with 1-2 tsp of honey. Cut and ENJOY.
