Get an extra boost of protein in your morning muffin by adding protein powder to the mix.
3 medium overripe bananas
1 tbsp honey
1 cup unsweetened applesauce
2 scoops vanilla or chocolate protein powder (I used a plant based pea protein)
3/4 cup old fashioned rolled oats
1 tsp baking powder
5 tbsp mini chocolate chips (I used Enjoy Life Brand)
Preheat oven to 350 degrees Fahrenheit
Line a muffin tin with 12 cupcake liners
Add all ingredients except chocolate chips to a blender pitcher (liquids in first) and blend on high until a smooth mixture forms
Pour muffin mixture evenly into each liner (should fill no more than 2/3 full)
Evenly sprinkle the chocolate chips into the muffin mixture.
Bake 20-22 minutes or until lightly golden tops
Let cool and store in an airtight container in the fridge for up to a week. These also can be frozen too once they are cooled.
