Baked Chicken Meatballs

Updated: Feb 18, 2019

These meatballs can be used in so many ways just by changing up the sauce or what you pair them with. Either way you make them, you won't be disappointed!

1 lb ground chicken breast (if you can't find ground chicken breast, use ground chicken which is usually a combination of breast and thigh- omit the oil if doing this)

1 tbsp olive oil

1 egg

1/4 cup panko or regular breadcrumbs (I use panko)

1 tbsp minced garlic or 1/2 tsp garlic powder

1/2 tsp kosher salt

1 tsp black pepper

  1. Line a large baking sheet with parchment paper and preheat oven to 350 degrees Fahrenheit

  2. In a medium bowl, mix all ingredients together to fully combine.

  3. Form the chicken mixture into meatballs. TIP: to allow for even cooking times, use a cookie scoop to help evenly divide the mixture.

  4. Arrange meatballs on the baking sheet, do not overcrowd the pan and put in the oven.

  5. Bake 10 minutes and remove the pan to flip the meatballs

  6. Bake for another 5-10 minutes until they are cooked through. Use a meat thermometer to ensure the chicken has reached 160 degrees.

These meatballs are amazing served in/on:

toasted roll

Whisk together any of the combinations below and toss with the meatballs before serving!
