Apple Cranberry Compote for Overnight Oats

Make this once and you’ll have overnight oats ready for the next 4 days!





Compote

2 medium or 2 small Granny Smith apples, cored and chopped.

3/4 fresh or frozen whole cranberries

1 tbsp honey (I used Wedderspoon Manuka 16 factor)

1 tsp cinnamon

1 cup water


In a medium sided saucepan, combine all compote ingredients and bring to a boil. Turn the heat down to a simmer and cook for about 20 minutes or until apples are softened and liquid reduces to a sauce.


Oats

2 cups old fashion oats, 1/2 cup into each bowl 4 bowls

2 cups water, milk or dairy free milk, 1/2 cup into each bowl

2 tsp chia seeds- 1/2 tsp into each bowl


*Additional toppings

walnuts or favorite nut or granola, 2 tbsp for each bowl

almond butter or favorite nut butter, 1 tbsp for each bowl


Mix and combine the oat ingredients. Top each bowl with 1/3 cup of cooled compote, 2 tbsp walnuts and 1 tbsp almond butter. These will keep in an air tight container in the fridge for up to a week!
